THE FIRST STEP IS TO SET UP YOUR CANDY FRAME.
You will need:
Four 14 by 1 by 1–inch food-safe acrylic bars
Marble or other heat-proof solid work surface
Masking tape
Unsalted butter
1 Spread the lightest sheen of butter in a 14-inch square on the work surface.
2 Arrange the acrylic bars, placing two bars widthwise across the ends of two bars laid lengthwise to make a rectangular frame with interior dimensions of 12 by 14 inches.
3 Using ordinary masking tape, tape the acrylic bars into place, taking care that the tape is on the tops and outsides of the bars only. Do not put any tape on the insides of the bars. It’s best to put one piece of tape in the center of each bar and then to secure all four corner joints.
4 Your frame is now ready for candy. Pour it in! Allow the candy to cool and set.
